A reference library of ingredient-level timing, technique notes, and transformation data. It's what the scheduling engine uses when it decides that bone-in chicken goes into the oven first, before the rice starts, before anything is touched on the stovetop.

Every protein, grain, vegetable, sauce, and garnish has a nutrition entry. The gap-detection rules (N-18 through N-24) reference these directly — they're what fires when a mise has no fermented food, no omega-3 source, or insufficient fiber.
